nick's gelato™ Packaging & Ordering
nick’s gelato™, fills, packages and ships your orders in a streamlined process so you are able to maintain your supply of gelato and sorbetto without interruption. Palazzolo's Artisan Gelato and Sorbetto packages all nick’s gelato™ products and ships them to a cold storage warehouse in Phoenix. For delivery, you simply place your orders on this website and invoicing will be via email. Simply follow the guidelines below.
Gelato Packaging
Our gelato and sorbetto is delivered to you in 25 pound boxes, each containing three 5-liter pan inserts of the same flavor gelato or sorbetto. Each pan of gelato weighs approximately 8 pounds. For example, one box of Roasted Pistachio Gelato contains three 5-liter pans of Roasted Pistachio. The first pan insert will be dropped into a stainless-steel slot in your gelato case while the remaining two will go into your freezer.
Our pans are packed in a way that makes your job as effortless as possible. All of the fresh ingredients are equally distributed throughout the pan. For example, when you're scooping through a pan of Banana Caramel Praline, you won't have to worry about supplying additional pralines on top. You'll see there are equal amounts from the top to the bottom. Palazzolo's method of producing the flavors and packing the pans also means that you won't have to garnish any of the flavors to let your customers know what the flavor is. If it's Red Raspberry Sorbetto for instance, the customer will plainly see hundreds of little raspberry chunks in the sorbetto. The same will be true with any flavor.
When you've scooped through roughly half of the first pan, you'll use a spatula or spade to transfer the remaining gelato onto the top of a brand new replacement pan. You always want your case to look refreshed and bountiful. Nobody wants to look at a gelato case with near empty pans. Your customers will think that it's leftovers from days ago.
The shelf life of nick’s gelato™ is six months. After the gelato is made fresh, it's cooled to about -20 degrees F. for delivery. Storing your extra gelato cold ( around -10 degrees F) in a separate freezer will ensure freshness for up to six months.

You should strive to order gelato at least 3-5 business days in advance of your needs. nick’s gelato™ will typically store in the warehouse only the flavors you originally ordered, so if you'd like to try a new flavor, it will take longer; normally 10-12 business days (since this new product must be made fresh at Palazzollo's factory).
With this in mind, we suggest monitoring your stock and when you're halfway through it, it's time to order again. Also, you should always keep additional flavors in stock. If your display case holds 9 pans, you should have at least 12-14 flavors in stock. For 6-pan cases, we recommend having 10 flavors on hand. We've found the more flavors you offer, the better the success of your gelato sales. Every few days, you should switch out slow-moving flavors with new ones. After a couple of days, put them back in your case and your customers will usually be more willing to try them.
